I always loved these cookies when visiting Grandmommy. I think they were a holiday staple for her.
Filling
2 1/2 cups pitted dates, chopped
1 cup white sugar
1 cup water
1 cup chopped nuts
Cook this slowly and stir to prevent burning, let cool, chill.
Cookie Dough
1 cup shortening
2 cups brown sugar
3 eggs, beaten
4 cups flour
1/2 tsp salt
1/2 tsp soda
Cream shortening and sugar, add eggs, then add dry ingredients. Chill. Divide dough into 3 parts, roll 1/4" thick. Spread the date filling on each part and roll up like a jelly roll. Chill. Slice and bake at 400 degrees.
